Cinammon pancakes with caramelised bacon

Pancakes can be boring, on pancake day in Britain we make thin pancakes and cover them in lemon and sugar. For me this is dull, there are so many flavour combinations out there and I like to go all out. These pancakes are my favourite, cinnamon and bacon the perfect combo.

Whether you eat them on pancake day, for breakfast or you have a craving, you will love them just as much as I do. Unless your a vegetarian, then we have a problem.

Mmmm... bacon!

 Makes 9

2 pieces of bacon
85g cup brown sugar
3 tsp baking powder
1 egg
pinch salt
1/3 tsp vanilla extract
3tbsp melted butter
280ml milk
1tsp cinnamon
1tbsp casting sugar
210g plain flour
Icing sugar 


1.Preheat your oven to gas mark 6 (400F/200C).

2. Place your bacon on a baking tray and cover with half of your brown sugar. Place in the oven for 10 minutes, then turn over and cover with the rest of the brown sugar, bake for another 10 minutes until crispy, remove and cool. 

3. Sift together your flour, baking powder, salt, casting sugar and cinnamon into a bowl, then add your egg, milk, vanilla essence and melted butter.

 4. Mix together until it forms a batter.

 5. Grease your pan, place in enough for one pancake. Flip when browned. 

 6. Cut up your bacon into pieces.

 7. Whisk together some icing sugar and cinnamon with some water to make a drizzle.

 8. Pancakes made, it's time to stack. On top of each pancake place some bacon and some cinnamon drizzle then place the next pancake on top and so on.
