Peanut butter baked doughnuts


 Who doesn't love a good doughnut, I especially love baked doughnuts because they make me feel so much better when I'm eating them as I know they are not smothered in oil. These doughnuts are flavoured with peanut butter, topped with a peanut butter glaze and smothered in chopped peanuts and chocolate chips. Peanut lovers beware, you may become addicted!




Makes 8

Doughnuts
200g plain flour
55g  Casting sugar
30g brown sugar
28g unsalted butter
25ml vegetable oil
1 eggs
125ml milk
3/4 tsp baking powder
1/8 tsp baking soda
1/4 tsp nutmeg
pinch of salt
100g peanut butter


Glaze
120g icing sugar
80g peanut butter
25ml milk
peanuts (cut up)
Chocolate chips


Method

1. Preheat your oven to gas mark 6 (200C/400F) 
 2. Mix together your peanut butter, sugars and butter.

 3. Add your oil and egg and mix.

 4. Add all your dry ingredients and your milk until it forms something like a cake dough. 

 5. Place in your doughnut pan to about 3/4 full, I use a round piping nozzle and piping bag to make it even, but you can scoop it in to make things easier.

1. Add your icing sugar, peanut butter and milk to the bowl and mix through, it should be slightly runny, if still thick add a little more milk, if to runny add icing sugar. Then dunk your doughnuts in the mixture in a round action to cover all of them, remove and decorate with the chopped peanuts and chocolate chips.
