Cinnamon bun cake

I love cake and I love cinnamon buns, so it was obvious that one day I would combine the two and come up with this tasty treat.

Breakfast can sometimes be boring, but on special occasions it's nice to spice things up. This is why I love this cinnamon cake, it's sweet and delicious. Perfect for not only breakfast but lunch, dinner, supper and all things in between.

My family loved it, and it was almost gone by the end of the day.

210g plain flour + 1tbsp flour
100g casting sugar
3/4 tbsp baking powder
1 egg
170ml milk
1tsp vanilla essence
2tbsp melted butter
112g butter
85g brown sugar
1tbsp cinnamon

140G icing sugar
2tbsp milk
1tsp vanilla essence

  1. Preheat oven to gas mark 4 (350F/180C). Grease a 8inch cake pan.
  2. Mix together the 210g flour, sugar, salt, baking powder, milk, eggs, vanilla and melted butter.
  3. Place it in the cake pan.
  4. Now beat the remaining butter with the brown sugar, tbsp of flour, and cinnamon.
  5.  Pour the mixture on top of the cake mix  and using a knife stir in to make swirls.
  6. Bake the cake for about 35-40 minutes until cooked through, then remove and cool for 15 minutes.
  7. For the icing, mix together icing sugar, vanilla essence and milk until i creates a runny consistency.
  8.  Drizzle over warmed cakes so it melts slightly.
There you have it a cinnamon bun cake perfect for any occasion and such a sweet treat. Enjoy!
