I've had such a rough first week back in work that I needed cheering up, the one thing that helps me to do this is baking. So with my cupboards being empty I ran to Tesco to get some supplies. I love baked doughnuts as they are so quick to make, and once you have a basic recipe you can adapt it to suit all flavour combinations.
I love the taste of cinnamon, not only does it remind me of Christmas (which i've already started preparing for), but it's also such a good flavour of doughnut! I decided to add some chocolate chips to the mixture just because who doesn't love chocolate.
MAKES 18
You will need a doughnut pan
INGREDIENTS
400g plain flour
115g Caster sugar
60g brown sugar
55g unsalted butter
50ml vegetable oil
2 eggs
250ml milk
1 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp nutmeg

1tsp Vanilla extract

Sugar glaze
100g caster sugar
2 tbsp cinnamon
50g butter
METHOD
- Preheat your oven to Gas mark 6 (200C/400F) and grease your tin with butter to avoid sticking.
- Beat together your butter, and both sugars until creamed together.
- Add your oil and eggs and mix.
- Add your baking powder, baking soda, nutmeg, cinnamon, salt and vanilla extract and mix.
- Add your flour and milk and mix.
- Add your chocolate chip and mix.
- Using a piping bag or a spoon add your batter to the tin filling to just below the top.
- Place in the oven for 10 minutes once cooked remove and allow to cool for 10 minutes.
- Remove from the tin and place to the side. The repeat the process again with the rest of the batter.
- Once all the doughnuts are cooled, start making your sugar glaze.
- Melt your butter and put to the side.
- Mix together your cinnamon and sugar until combined.
- Take a doughnut and dip on side in the butter and then into the sugar. Then repeat on the other side of the doughnut.
