Gluten free banana oatmeal muffins



Being healthy is hard, especially when you are a cake addict. I am constantly craving sweet things and fruit just doesn't cut it. I decided that it was time to come up with a freezable snack, low in calories but tasty.


These gluten free oatmeal muffins are perfect, just take one out the freezer, zap it in the microwave and you are left with a warm, sweet snack. Low in calories and perfect to fix the craving.


They may not be the prettiest things in the world, but they do taste good and you don't feel so guilty after eating one. Just be sure that you don't eat to many, no muffin is good for you, these are just healthier.

Makes 12

 Muffin
2 eggs
300g porridge oats
1tsp vanilla extract
1tbsp baking powder
3 bananas
45g brown sugar
225ml milk
1tsp cinnamon
sultanas or raisins 


Method

1. Preheat your oven to gas mark 5 (190C/375F).

 2. Mash your bananas together.

 3. Mix all your ingredients together in a bowl. (Yes it does look like porridge, but it tastes so much better).

 4. Grease your tin using low fat margarine or cooking spray. Fill to the top.

 5. Place in the oven for 20 minutes or until firm and brown.

 6. Remove from the pan and either eat warm or leave to cool. They should store in a tin for up to 3      days or in the freezer for two weeks.
